This would be much easier to tell in PC as you can just look at when the game is counting wheelie duration in memory but this is my best guess as to how this is working. probably brushing the tail of the bike against the road too long or something. My guess is that you can't let the "Insane Stunt Bonus" text come up as it counts as cancelling the wheelie.

I doubt this will be in the remasters as PC / IOS / Android all don't have this problem providing there isn't some emulation layer going on and this is properly recompiled.
